Merlin Labron-Johnson is the chef-owner of Osip, a Michelin-starred and Green-starred restaurant in Somerset, alongside the wine bar and bistro The Old Pharmacy. His cooking is deeply connected to the surrounding landscape, celebrating the seasons and showcasing vegetables grown on his nearby biodynamic farm. Thoughtful, simple and quietly inventive, Merlin’s approach echoes Skye’s own ethos and enduring legacy: a deep respect for nature and a belief in cooking with what is growing, abundant and at its very best.
